Ingredients
Chicken Patties
- 2 lbs ground chicken
- 4 garlic cloves, minced
- 1/2 onion, finely diced
- 1-2 jalapeno peppers, seeded and finely diced
- 2 teaspoons paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 3/4 cup shredded pepper jack cheese
- 1/2 cup chopped fresh cilantro
- Vegetable or olive oil, for grill
- 8 slices of cheese (optional, American or white cheddar)
- 8 hamburger buns
Roasted Garlic Mayo
- 1 head of roasted garlic (see instructions for roasting)
- 1/3 cup mayonnaise
- Salt and pepper, to taste
Guacamole
- 2 large avocados
- Juice of 1 lime
- 2 tablespoons cilantro, finely chopped
- Salt and pepper, to taste
Instructions
- Prepare Roasted Garlic Mayo: Roast the garlic head by drizzling with olive oil, wrapping in foil, and baking at 400°F for 40 minutes or until soft. Squeeze garlic out of skins into a bowl, then mix with mayonnaise, salt, and pepper. Cover and refrigerate until needed.
- Preheat Grill: Heat your grill to medium-high heat to ensure even cooking of the burgers.
- Make Chicken Mixture: In a large mixing bowl, combine ground chicken, minced garlic, diced onion, diced jalapenos, paprika, kosher salt, ground pepper, shredded pepper jack cheese, and chopped cilantro. Gently mix until all ingredients are well incorporated.
- Form Patties: Divide the chicken mixture into 8 equal portions and shape each into a patty forming the base of your burgers.
- Prepare Grill Grate: Lightly oil the grill grate by soaking a paper towel in vegetable oil and wiping it over the grates to prevent sticking.
- Grill Burgers: Place patties on the grill and cook covered for about 8 minutes per side or until the internal temperature reaches 165°F. Add a slice of cheese during the last minute of cooking if desired to melt on top.
- Prepare Guacamole: Halve and pit the avocados, scoop the flesh into a bowl, and mash with a fork. Stir in chopped cilantro, lime juice, salt, and pepper. Adjust seasoning to taste.
- Assemble Burgers: Toast the hamburger buns lightly on the grill. Spread roasted garlic mayo on the buns, add the grilled chicken patties, and top with guacamole and any additional favorite toppings.
Notes
- Ensure the jalapenos are seeded to reduce heat according to preference.
- Use a meat thermometer to confirm chicken patties reach a safe internal temperature of 165°F.
- If grilling is unavailable, patties can be cooked on a stovetop skillet over medium heat for about 6-7 minutes per side.
- Roasted garlic mayo and guacamole can be made ahead to save time.
- Customize burgers with additional toppings like lettuce, tomato, or pickles as desired.
