Italian Strawberry Pudding, known as Gelo di Fragole, is a silky and refreshing dessert made from pureed fresh strawberries, gently thickened with cornstarch, and chilled to perfection. This light and naturally sweet pudding is finished with a drizzle of honey, a dollop of creamy Crème fraîche, and aromatic basil leaves, making it a delightful treat perfect for warm weather or any occasion.
Ingredients
For the Pudding
- 5 tablespoons cornstarch
- 1 pound strawberries, stems removed and quartered
- 5 to 6 tablespoons raw sugar (turbinado)
- 1 lemon, zested and juiced
For Serving
- 1/4 cup Crème fraîche (optional)
- 1/4 cup honey (or more to taste)
- Basil leaves, small or torn, for garnish
Instructions
- Dissolve the cornstarch: In a medium mixing bowl, whisk together the cornstarch and 1 cup of cold water until completely smooth and set aside to use later.
- Make a strawberry puree: Place the quartered strawberries in the bowl of a large food processor. Sprinkle in the raw sugar and add the lemon juice. Secure the lid and puree until the mixture is completely smooth. Taste the mixture and, if desired, add a little more sugar and blend again to combine, keeping in mind honey will be added at the end.
- Thicken the pudding: Pour the strawberry puree into a saucepan over medium heat. Slowly add the dissolved cornstarch mixture, stirring constantly. Continue to stir and gently heat the mixture until it begins to bubble lightly and thickens, about 5 to 7 minutes. Be careful to avoid boiling or burning the mixture by managing the heat properly.
- Chill: Remove the saucepan from the heat and immediately pour the thickened strawberry pudding into dessert cups or small bowls. Allow it to cool to room temperature before transferring to the refrigerator. Chill for at least 2 hours or preferably overnight to set completely.
- Finish and serve: Before serving, add a dollop of Crème fraîche on top of each pudding cup if using. Drizzle with honey to your preferred sweetness. Garnish with fresh lemon zest and torn basil leaves for an aromatic and elegant presentation.
