Description

This Italian Quesadillas recipe offers a delicious fusion of Italian flavors and Mexican quesadilla style. Featuring rotisserie chicken, fresh basil, mozzarella cheese, and pizza sauce layered inside warm tortillas, it's a quick and satisfying meal perfect for lunch or dinner. Ready in just 11 minutes, these quesadillas are crispy on the outside with melty cheese and savory toppings inside.

Ingredients

Quesadilla Ingredients

  • 4 tortillas
  • 16 oz rotisserie chicken, chopped or shredded
  • 2 tablespoons fresh basil, chopped or chiffonade
  • 1 cup part-skim mozzarella cheese
  • 1/2 jar pizza sauce (about 135 grams)

Instructions

  1. Preheat the skillet: Heat a skillet over medium-low heat and lightly grease it with cooking spray or brush with olive oil to prevent sticking and help the quesadilla crisp nicely.
  2. Add tortilla and toppings: Place one tortilla in the heated skillet. On one half of the tortilla, spread the pizza sauce, then evenly distribute the chopped rotisserie chicken, fresh basil, and mozzarella cheese.
  3. Cook until cheese melts: Allow the tortilla to cook for a few minutes until the cheese begins to melt and the underside of the tortilla starts to develop a golden-brown color.
  4. Fold the quesadilla: Flip the half of the tortilla without toppings over the half with toppings, forming a half-moon shape to encase the filling.
  5. Cook the folded quesadilla: Cook for about one more minute, then carefully flip the quesadilla again. Continue cooking until the tortilla is browned to your liking and the cheese inside is fully melted.
  6. Serve: Remove from the skillet, cut into halves or quarters, and serve immediately for the best taste and texture.

Notes

  • Use part-skim mozzarella cheese for a healthier alternative with less fat.
  • Adjust the amount of pizza sauce to taste if you prefer less moisture in the quesadilla.
  • Fresh basil can be substituted with dried Italian herbs if fresh is unavailable.
  • For crispier quesadillas, cook them a bit longer on medium heat, but watch carefully to avoid burning.
  • Optionally, add a sprinkle of red pepper flakes for a slight kick of heat.
