Description

This Honey Mustard Chicken Salad is a quick and flavorful dish combining tender cooked chicken with a creamy honey mustard dressing, crunchy vegetables, and cashews for added texture. Perfect for sandwiches, wraps, or served over greens, it offers a delicious and versatile meal option ready in just 10 minutes.

Ingredients

Dressing

  • ½ cup avocado oil mayonnaise
  • ¼ cup Dijon mustard
  • 2 tablespoons pure honey
  • ¼ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Salad

  • 3 cups cooked chicken breast or thighs, cubed or shredded
  • 1 stalk celery, diced (about ⅓ cup)
  • ⅓ cup shredded carrots
  • ¼ cup diced red onion
  • ¼ cup chopped cashews

Instructions

  1. Make the dressing: In a small bowl, whisk together the avocado oil mayonnaise, Dijon mustard, 2 tablespoons of honey, dried thyme, garlic powder, salt, and black pepper until smooth and well combined. Set aside.
  2. Combine salad ingredients: In a medium-sized bowl, add the cooked chicken, diced celery, shredded carrots, diced red onion, and chopped cashews. Pour the prepared honey mustard dressing over the mixture.
  3. Toss and serve: Gently toss all ingredients together until the chicken and vegetables are evenly coated with the dressing. Serve the salad chilled or at room temperature with crackers, in a wrap, sandwich, or over a bed of lettuce. Optionally, garnish with toasted cashews and a sprinkle of black pepper for extra flavor and crunch.

Notes

  • Use cooked chicken breast or thighs according to your preference; rotisserie or leftover chicken works well.
  • To add more crunch, consider toasting the cashews before adding them to the salad.
  • This salad can be made a few hours ahead and refrigerated to enhance flavor melding.
  • Serve chilled or at room temperature depending on preference.
  • Great for meal prep or as a quick lunch option.
