Description

A vibrant and refreshing Honey Lime Rainbow Fruit Salad featuring a colorful mix of fresh strawberries, pineapple, blueberries, grapes, kiwis, mandarins, and optional bananas, all tossed in a zesty honey-lime dressing. Perfect as a healthy, naturally sweet snack or side dish, this fruit salad is quick to prepare and bursting with bright flavors.

Ingredients

Fruits

  • 1 lb fresh strawberries, chopped
  • 1 lb fresh pineapple, chopped
  • 12 oz fresh blueberries
  • 12 oz red grapes, sliced into halves
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges, peeled and sectioned
  • 2 bananas, sliced (optional)

Dressing

  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 tbsp fresh lime juice

Instructions

  1. Prepare the Fruit: Add all the chopped and prepared fruits including strawberries, pineapple, blueberries, grapes, kiwis, mandarins, and optional banana slices into a large mixing bowl.
  2. Make the Dressing: In a small mixing bowl, whisk together the honey, lime zest, and fresh lime juice until well combined to create a bright and sweet dressing.
  3. Toss and Serve: Pour the honey-lime dressing over the bowl of mixed fruit and gently toss to evenly coat all pieces of fruit. Serve immediately for the freshest taste and texture.

Notes

  • Bananas are optional since they can brown quickly; add just before serving if used.
  • This salad is best served fresh to maintain the vibrant look and texture of fruit.
  • For a vegan alternative, substitute honey with maple syrup or agave nectar.
  • Use ripe but firm fruit to avoid mushiness.
