Instructions
- Prepare Chocolate: Place the finely chopped bittersweet chocolate into a large heat-safe bowl, ensuring it’s ready to receive the hot cream.
- Heat Cream: Pour the heavy cream into a heavy-bottomed pot and heat until it reaches a gentle simmer, being careful not to let it boil.
- Combine Cream and Chocolate: Immediately pour the simmering cream over the chopped chocolate. Cover the bowl with a plate or plastic wrap and let it sit undisturbed for 5 minutes to allow the chocolate to soften.
- Whisk Ganache: Remove the cover and start whisking gently. Though the mixture may look separated at first, continue whisking from the middle outward until a smooth, glossy ganache forms.
- Add Butter and Honey: Whisk in the softened butter, honey, and a pinch of salt until all are fully incorporated and the ganache is smooth and shiny.
- Chill Ganache: Cover the bowl and refrigerate for 30 minutes or until the ganache is very firm and has the consistency of chilled nut butter.
- Scoop Ganache: Line a sheet pan with parchment paper. Scoop 1 tablespoon portions of ganache and place them on the sheet pan. Return the sheet pan to the fridge for another 30 minutes to firm up for easier rolling.
