Ingredients
Salmon
- 2 lbs. salmon
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Pomegranate Orange Glaze
- 2 cups pomegranate juice
- ¼ cup brown sugar
- ¼ cup fresh squeezed orange juice (from about 1 orange)
- 1 tablespoon orange zest (from about 1 orange)
Garnishes
- Pomegranate seeds
- Orange slices
- Parsley
- Green onions
Instructions
- Preheat oven and prepare baking sheet. Preheat your oven to 300° F (149° C) and line a large baking sheet with parchment paper to ensure the salmon doesn't stick.
- Season the salmon. Place the salmon fillet skin-side down on the prepared baking sheet. Sprinkle evenly with kosher salt and black pepper to season.
- Make the pomegranate orange glaze. In a saucepan over medium heat, combine pomegranate juice, brown sugar, freshly squeezed orange juice, and orange zest.
- Simmer the glaze. Bring the mixture to a boil, then reduce the heat and simmer for 20 to 25 minutes, stirring occasionally, until the sauce thickens to a syrup-like consistency.
- Glaze the salmon. Brush the thickened pomegranate sauce generously over the seasoned salmon.
- Bake the salmon. Place the glazed salmon in the preheated oven and bake for 30 to 38 minutes, or until the internal temperature reaches 145° F (63° C) when checked with a meat thermometer.
- Garnish and serve. Transfer the baked salmon to a serving platter and garnish with fresh pomegranate seeds, orange slices, chopped parsley, and sliced green onions for a colorful presentation.
Notes
- Be sure to monitor the simmering glaze to prevent it from burning as it thickens.
- Use fresh juice and zest for the best bright citrus flavor in the glaze.
- Let the salmon rest for a few minutes after baking to allow the juices to redistribute.
- This salmon pairs wonderfully with roasted vegetables or a fresh green salad.
- Internal temperature of 145° F ensures the salmon is safely cooked but still moist.
