Instructions
- Prepare the Filling: In a food processor, combine the cottage cheese, mascarpone, maple syrup, and vanilla extract. Blend until smooth and creamy. If you don’t have a large food processor, blend the cottage cheese separately and then mix in the remaining ingredients using a hand mixer or whisk until well combined.
- Mix Coffee and Protein: In a small bowl, whisk together the chilled coffee and chocolate whey protein powder until the protein powder is fully dissolved.
- Dip Ladyfingers: Quickly dip each ladyfinger into the coffee-protein mixture, ensuring they are thoroughly coated but not saturated to avoid sogginess. Layer the dipped ladyfingers evenly in a small 9x6-inch baking dish.
- Layer Filling and Ladyfingers: Spoon half of the cheese filling over the first layer of ladyfingers and spread it evenly. Repeat the process with the remaining dipped ladyfingers, then top with the remaining filling. Spread it smoothly over the final layer.
- Chill Overnight: Cover the dish with plastic wrap and refrigerate it overnight (approximately 8 hours) to allow the flavors to meld and the dessert to set properly.
- Serve: Before serving, dust the top evenly with cocoa powder for a classic tiramisu finish. Slice, serve, and enjoy your high-protein tiramisu.
