Description

This Hawaiian Cheesecake Salad is a creamy, fruity dessert salad featuring a medley of tropical fruits combined with a luscious cheesecake-flavored dressing. Perfectly chilled and rich in flavor, it's a refreshing treat ideal for summer gatherings or anytime you crave a sweet, tangy delight.

Ingredients

Fruits

  • 1 lb strawberries (washed, tops removed and quartered)
  • 11 oz mandarin oranges (drained)
  • 20 oz pineapple chunks (drained)
  • 5 kiwi fruit (peeled, sliced and halved)
  • 2 mangoes (cubed)

Dressing

  • 8 oz cream cheese (softened)
  • 3.4 oz instant cheesecake flavored pudding mix
  • 1 cup French vanilla coffee creamer

Instructions

  1. Prepare the fruit: In a large mixing bowl, add the quartered strawberries, drained mandarin oranges, drained pineapple chunks, sliced kiwi, and cubed mangoes. Gently mix the fruit together to combine evenly and set aside.
  2. Beat the cream cheese: In a separate bowl, place the softened cream cheese and beat thoroughly until smooth and creamy, ensuring no lumps remain.
  3. Add pudding and creamer: Add the instant cheesecake flavored pudding mix and the French vanilla coffee creamer to the beaten cream cheese. Begin beating on low speed to combine, then increase to medium-high speed and continue beating until the dressing is smooth and well blended.
  4. Combine fruit and dressing: Pour the creamy cheesecake dressing over the mixed fruit in the large bowl. Stir gently but thoroughly to coat all the fruit pieces evenly with the dressing.
  5. Chill the salad: Cover the salad with plastic wrap or a lid and refrigerate for at least 4 hours to allow the flavors to meld and the dessert to firm up slightly. Serve chilled.

Notes

  • Use fresh and ripe fruits for the best flavor and texture.
  • Ensure the cream cheese is softened to avoid lumps when beating.
  • Instant cheesecake pudding mix provides the dessert with its signature taste, but regular instant vanilla pudding can be used in a pinch.
  • For a lighter version, substitute half-and-half or milk for the coffee creamer.
  • This salad can be made a day ahead and kept refrigerated to enhance the flavors.
