Description

This Ground Turkey Teriyaki Stir Fry is a quick and flavorful dish perfect for a healthy weeknight dinner. Tender ground turkey, fresh vegetables, and a homemade teriyaki sauce come together in a simple stir fry that's both satisfying and easy to prepare in just 30 minutes.

Ingredients

Teriyaki Sauce

  • ¼ cup soy sauce
  • 3 tablespoons brown sugar
  • 1 cup water, divided
  • 2 tablespoons honey
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated or minced
  • 2 tablespoons corn starch
  • 1 tablespoon orange zest

Stir Fry

  • 1 lb ground turkey
  • 2 teaspoons sesame oil
  • 3 cups broccoli florets (fresh or frozen)
  • 1 small onion, small diced
  • 1 cup shredded carrots
  • Salt and pepper to taste

Instructions

  1. Make the Teriyaki Sauce: In a small saucepan over medium heat, combine ¾ cup of water, soy sauce, minced garlic, grated ginger, honey, and brown sugar. Stir the ingredients together and bring the mixture to a low boil.
  2. Thicken the Sauce: While the sauce is heating, whisk together the remaining ¼ cup water with the corn starch until fully dissolved. Slowly pour this slurry into the sauce, stirring constantly until it thickens. Remove from heat immediately, then stir in the orange zest. Set aside until ready to use in the stir fry.
  3. Cook the Aromatics and Turkey: Heat sesame oil in a wok or large skillet over medium-high heat. Add diced onions and cook for several minutes until softened. Add the ground turkey, breaking it apart as it cooks, and continue to cook until the turkey reaches an internal temperature of 165°F (about 7-10 minutes), ensuring it is fully cooked through.
  4. Add the Vegetables: Stir in the broccoli florets and shredded carrots. Cook until the vegetables are heated through and tender but still crisp, about 4-5 minutes.
  5. Combine with Teriyaki Sauce: Reduce heat to low, pour the prepared teriyaki sauce over the turkey and vegetables, and gently stir to combine. Allow the mixture to simmer for several minutes to marry the flavors before serving.
  6. Serve: Serve the stir fry hot over steamed rice or noodles, or enjoy as is for a low-carb option.

Notes

  • Use fresh broccoli for best texture, but frozen works well too—just thaw before cooking.
  • If you prefer a spicier kick, add a pinch of red pepper flakes or a dash of sriracha to the sauce.
  • Vegetarian option: substitute turkey with firm tofu or tempeh.
  • To keep the stir fry crispier, add vegetables toward the end of cooking and avoid overcooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
