Ingredients

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil (or favorite cooking oil)
  • 2-3 garlic cloves, minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 1-2 Tbsp sriracha
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (adjust to taste)
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha (adjust to taste)
  • 1 tsp rice vinegar
  • 2 tsp honey

To Serve

  • Cooked rice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado slices
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds


Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Taste and adjust the spiciness or sweetness by adding more sriracha or honey as preferred. Chill the sauce until ready to serve.
  2. Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey and break it up into smaller pieces. Cook until browned and no longer pink, reaching an internal temperature of 165°F.
  3. Add Flavorings and Simmer: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Let the mixture simmer for 2-3 minutes, stirring occasionally to blend the flavors.
  4. Thicken the Sauce: Sprinkle corn starch over the turkey mixture and stir thoroughly to thicken. Optionally, fold in about 2 tablespoons of the prepared Bang Bang Sauce for extra flavor before removing from heat.
  5. Assemble Bowls: In serving bowls, layer cooked rice and your choice of fresh vegetables such as shredded carrots, sliced cucumbers, shelled edamame, pickled onions, avocado, shredded cabbage, and sliced green onions. Spoon the warm ground turkey mixture over the top and drizzle with additional Bang Bang Sauce. Garnish with sesame seeds and extra sliced green onions if desired.

Notes

  • Adjust the sriracha amount in both the ground turkey and Bang Bang sauce to control the heat level to your preference.
