Instructions

- Rinse and dry zucchini: Rinse the zucchini slices thoroughly under cold water to remove excess salt and pat them dry with paper towels to prevent sogginess in the casserole.
- Sauté onions: Heat olive oil in a large skillet over medium-high heat. Add the diced onions and cook for about 2 minutes until they begin to soften.
- Cook garlic and ground beef: Add minced garlic and ground beef to the skillet. Break the meat apart with a spoon and cook, stirring frequently, until the beef is browned thoroughly with no pink remaining, about 5 minutes.
- Season and combine beef mixture: Stir in the drained diced tomatoes, Italian seasoning, 1/2 teaspoon kosher salt, and black pepper. Remove the skillet from heat.
