Instructions
- Blend and freeze: For fruit granita, combine the chopped fruit, water, and sugar in a blender or food processor. Blend for about 30 seconds until smooth. For coffee granita, mix brewed coffee with sugar until dissolved, adjusting sweetness to taste. Pour the mixture evenly into a rimmed sheet pan or a baking dish measuring at least 8x12 inches. Place in the freezer for one hour.
- Scrape: After one hour, use a metal fork to scrape through the partially frozen mixture, breaking up ice crystals to create a granular texture. Return it to the freezer for an additional 30 minutes to one hour.
- Repeat: Continue scraping the mixture with a fork every 30 minutes to an hour, until the granita is fully frozen and achieves a fluffy granulated consistency. This process generally takes about 2 hours total when using a large sheet tray, or longer if using a smaller baking dish.
- Serve or store: Once fully frozen, scrape the granita into a pile and scoop into chilled serving glasses to enjoy immediately. Alternatively, transfer to an airtight container and store in the freezer until ready to serve. Garnish with sliced fruit or coffee beans if desired.
