Ingredients
Cake Ingredients
- 1 ¼ cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/3 cup molasses
- 1/3 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
Topping Ingredients
- 1/2 cup brown sugar (packed)
- 1/3 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 cup apple cider (not apple cider vinegar)
- 1/3 cup water
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, granulated sugar, ground cinnamon, and ground ginger until well combined.
- Combine Wet Ingredients: In a separate large bowl, whisk together the unsweetened applesauce, milk, vegetable oil, molasses, and vanilla extract until fully incorporated and smooth.
- Combine Batter: Gradually stir the dry ingredients into the wet ingredients until just combined, taking care not to overmix which could affect texture.
- Prepare Baking Dish: Pour the prepared batter into an 8x11-inch shallow baking dish or a dish with a similar 2-quart capacity, spreading it evenly.
- Mix Sugar Topping: In a separate bowl, combine the brown sugar, granulated sugar, and ground cinnamon, mixing until evenly blended.
- Add Sugar Topping: Sprinkle the sugar and cinnamon mixture evenly over the batter surface in the baking dish.
- Add Liquids: Carefully pour the apple cider and water mixture evenly over the sugar topping without stirring, which will create the pudding-like layer during baking.
- Bake: Place the baking dish in the preheated oven and bake for approximately 40 minutes, or until the center of the cake is set and a toothpick inserted in the middle comes out mostly clean.
- Cool and Serve: Allow the cake to cool for 5 to 10 minutes before serving to let the pudding layer set slightly for best texture and flavor.
Notes
- Ensure not to stir after adding the apple cider and water to allow the sugar topping to create a pudding layer beneath the cake.
- Use a shallow baking dish to help achieve the correct pudding-to-cake ratio.
- Serve warm, optionally with whipped cream or a scoop of vanilla ice cream for extra indulgence.
- Store leftovers covered in the refrigerator and consume within 3 days for optimal freshness.
