Chicken
- 1 lb chicken breasts, cut into cubes
- 2 tbsp butter
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1-2 tbsp minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce, as needed for coating
Potatoes
- 4-5 small/medium-sized russet potatoes, peeled and cut into small cubes
- Olive oil, for tossing
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
- Paprika, to taste
Topping
- 1 cup shredded mozzarella cheese
- Dried parsley, for garnish (optional)
- Additional Buffalo Wild Wings Garlic Parmesan Sauce (optional, for topping)
Instructions
- Prepare the Potatoes: Wash, peel, and cut the potatoes into small cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika, ensuring they are well coated in the seasoning.
- Air Fry the Potatoes: Place the seasoned potatoes in the air fryer basket and cook at 400°F (204°C) for about 25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
- Prepare the Chicken: While the potatoes cook, cut the chicken breasts into cubes ready for seasoning and cooking.
- Cook the Chicken: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the chicken and season with salt, pepper, paprika, onion powder, and Italian seasoning. Cook until the chicken is fully cooked and browned on the outside.
- Add Garlic and Sauce: Once the chicken is cooked through, add the minced garlic to the skillet and cook for about a minute until fragrant. Stir in enough Buffalo Wild Wings Garlic Parmesan Sauce to coat the chicken well.
- Combine Potatoes and Chicken: Add the crispy air-fried potatoes to the skillet and mix everything thoroughly to combine the flavors.
- Add Cheese and Broil: Sprinkle shredded mozzarella cheese evenly over the chicken and potato mixture. Place the skillet or an oven-safe dish under the broiler for a few minutes until the cheese melts and bubbles. Alternatively, cover with a lid and let it sit on the stove until the cheese melts.
- Garnish and Serve: Remove from heat, garnish with dried parsley, and add extra Garlic Parmesan sauce if desired. Serve immediately and enjoy!
Notes
- Adjust the seasoning on the potatoes to your taste; garlic powder and paprika can be increased or decreased as preferred.
- When broiling, keep a close eye to prevent the cheese from burning.
- You can substitute mozzarella with other melting cheeses like provolone or cheddar.
- For extra crispiness, shake the air fryer basket every 7-8 minutes during cooking.
- This recipe works well with other potatoes, but russet potatoes offer the best texture.
