Ingredients
Steak
- 1.5 pounds sirloin steak (or use ribeye, strip steak, or another tender well marbled cut)
- Salt & pepper (to taste)
Cooking
- 1 tablespoon olive oil
- 4 tablespoons butter (1/2 stick), divided
- 4-5 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
Instructions
- Prep the steak: Take the steak out of the fridge and let it warm up for 30 minutes prior to starting the recipe if you can. This helps it cook evenly.
- Cut and season: Cut the steak into 1-inch cubes and season generously with salt and pepper on all sides for maximum flavor.
- Sear the steak: Heat a skillet over medium-high heat and add olive oil and 1 tablespoon of butter. Once the butter melts and the pan is hot, add the steak cubes in a single layer without crowding. Cook undisturbed for about 2 minutes per side to achieve a medium doneness and a good sear. Work in batches if necessary. Transfer the cooked steak to a plate after each batch.
- Make the garlic butter sauce: Reduce the heat to medium-low and add the remaining butter and minced garlic to the skillet. Stir almost constantly for 1-2 minutes until the garlic is fragrant and cooked but not browned.
- Toss and serve: Remove the skillet from heat, return the steak cubes and any juices from the plate back to the pan, and toss in the garlic butter sauce to coat evenly. Sprinkle with fresh parsley and serve immediately.
Notes
- Letting the steak come to room temperature ensures even cooking.
- Don’t overcrowd the pan to maintain a good sear and prevent steaming.
- Use a meat thermometer if desired; medium doneness corresponds to about 135°F internal temperature.
- Fresh garlic works best, avoid pre-minced garlic for optimal flavor and texture.
- This dish pairs well with mashed potatoes, steamed vegetables, or a fresh salad.
