Description

These Frozen Peanut Butter Greek Yogurt Bites are a delicious, creamy treat combining rich peanut butter and tangy Greek yogurt, all coated in smooth melted chocolate, then frozen into bite-sized snacks. Perfect for a healthy, protein-packed dessert or snack that is easy to make and gluten-free.


Ingredients

Chocolate Layer

  • ⅓ cup chocolate chips (we love using Enjoy Life dairy free chips)
  • 2 tsps coconut oil

Peanut Butter Greek Yogurt Mixture

  • ½ cup plain Greek yogurt
  • ½ cup smooth peanut butter
  • ½ cup almond flour
  • 1 tbsp maple syrup

Topping

  • 1 tbsp hemp hearts


Instructions

  1. Melt Chocolate: In a small saucepan over medium heat, gently melt the chocolate chips and coconut oil together, stirring continuously until the mixture is smooth and well combined.
  2. Prepare Chocolate Base: Remove the melted chocolate from the heat and pour half of it evenly into the bottom of an ice cube tray to form the base layer.
  3. Blend Yogurt Mixture: In a food processor or blender, combine the Greek yogurt, smooth peanut butter, almond flour, and maple syrup. Blend the ingredients until the mixture is perfectly smooth and creamy.
  4. Assemble Bites: Spoon the peanut butter and Greek yogurt mixture over the chocolate base in the ice cube tray, filling each compartment.
  5. Top with Chocolate: Pour the remaining melted chocolate over the peanut butter mixture to cover the top layer.
  6. Add Hemp Hearts and Freeze: Sprinkle hemp hearts on top of each bite for added texture and nutrition, then place the ice cube tray in the freezer for at least 30 minutes or until firm.
