Description

This Fresh Blackberry Ice Cream is a creamy, no-churn delight made with pureed blackberries, heavy cream, and sweetened condensed milk. It combines the vibrant flavor of fresh berries with a smooth, luscious texture, perfect for a refreshing homemade treat without the need for an ice cream maker.

Ingredients

Blackberry Puree

  • 24 ounces fresh blackberries (rinsed and patted dry, about 4 cups)
  • ½ teaspoon lemon juice
  • ½ cup sugar

Ice Cream Base

  • 2 cups heavy cream
  • 14 ounces sweetened condensed milk
  • 2 teaspoons vanilla extract

Instructions

  1. Puree the Blackberries: Add the fresh blackberries to a blender and pulse until fully pureed, achieving a smooth, juicy consistency. Press the puree through a fine-mesh sieve to remove the pulp, collecting about 2 cups of liquid blackberry juice.
  2. Reduce the Puree: Transfer the blackberry juice to a medium saucepan, add lemon juice and sugar, then heat over medium-high heat. Stir occasionally until the liquid reduces by half and thickens, about 5 minutes. Remove from heat and refrigerate until cold, approximately 2 hours.
  3. Whip the Cream: In a large bowl, beat the heavy cream with an electric mixer until stiff peaks form. Then, turn the mixer speed to low and slowly add the sweetened condensed milk followed by the vanilla extract. Increase speed again and beat until the mixture thickens.
  4. Combine and Fold: Transfer 2 cups of the whipped cream mixture to a separate bowl and mix in the cooled blackberry puree until well combined. Gently fold this mixture back into the remaining whipped cream to create swirls without overmixing.
  5. Freeze: Pour the finished mixture into a freezer-safe container and freeze for at least 6 hours until firm and scoopable.

Notes

  • For best results, use very fresh blackberries for a bright flavor.
  • Pressing the puree through a sieve ensures a smooth texture without seeds or pulp.
  • Be careful not to overmix the final folding step to maintain pretty blackberry swirls.
  • If you prefer a more tart ice cream, adjust lemon juice and sugar to taste during reduction.
  • This recipe requires no ice cream maker and is ideal for easy home preparation.
