Instructions
- Prepare the pan: Mist the cups of a silicone muffin pan lightly with cooking spray to prevent sticking. Preheat your oven to 350℉ (175℃) to get it ready for baking the egg bites.
- Blend ingredients: In a blender, combine the eggs, cottage cheese, shredded cheddar cheese, salt, and pepper. Blend until the mixture is completely smooth, ensuring the egg bites will have a creamy, uniform texture.
- Fill muffin cups: Divide the blended egg mixture evenly among the muffin cups, filling each about halfway. Sprinkle the top of each with the chopped fresh chives. At this stage, you can also add extras like vegetables or bacon to customize your bites.
- Bake: Place the muffin pan in the preheated oven and bake for 20-22 minutes. The egg bites should be puffed and slightly firm to the touch in the center when done.
- Cool and serve: Remove the pan from the oven and allow the egg bites to cool for a few minutes. They will deflate slightly once out of the oven. Carefully remove them from the muffin cups to enjoy immediately or to store.
- Storage: Store any leftover egg bites in an airtight container in the refrigerator. They will keep fresh for up to 5 days, making them convenient for meal prep.
