Ingredients

For the Panna Cotta

  • 3 tablespoons water

Instructions

  1. Gather Ingredients: Assemble all ingredients. Note that the mixed berries are reserved for serving after the panna cotta has set.
  2. Infuse Cream: In a medium saucepan, combine the heavy cream, sugar, split vanilla bean, and scraped seeds. Heat gently over medium heat until the mixture just reaches a simmer. Remove from heat, cover, and allow to steep for 15 minutes to infuse the vanilla flavor.
  3. Prepare Gelatin: While the cream mixture steeps, sprinkle the powdered gelatin evenly over the water in a small bowl. Let it stand about 5 minutes until the gelatin is fully moistened and blooms.
  4. Dissolve Gelatin: Uncover the cream mixture and return it to a simmer over moderately high heat. Remove from heat, then add the bloomed gelatin, stirring thoroughly until it dissolves completely. Remove and discard the vanilla bean pod (or save for another use).
  5. Pour and Chill: Divide the panna cotta mixture evenly among eight 4-ounce ramekins. Allow to cool to room temperature. Cover each ramekin with plastic wrap and refrigerate for at least 3 hours, until set but still slightly jiggly.
  6. Serve: Serve the panna cotta directly in the ramekins, topped with a generous portion of fresh mixed berries for added flavor and color.
