Ingredients
Pasta
- 8 ounces angel hair pasta
Shrimp Scampi Sauce
- 6 Tablespoons unsalted butter
- 1/2 cup diced yellow onion (about 1/2 medium onion)
- 6 cloves garlic, pressed or minced
- 1 pound medium or large raw shrimp, peeled and deveined
- 1/2 cup dry white wine
- 2 lemons, juiced (about 1/4 cup)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup grated parmesan cheese
- 2 Tablespoons fresh parsley, snipped (optional garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain the pasta once done and set aside.
- Prepare the garlic butter sauce: In a large skillet, melt the unsalted butter over medium heat. Add the diced yellow onion and minced garlic, cooking for 2-3 minutes until soft and fragrant, taking care not to brown the garlic.
- Cook the shrimp and deglaze: Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes until they start to turn pink and opaque. Pour in the dry white wine, lemon juice, kosher salt, black pepper, and crushed red pepper flakes. Reduce the heat to low and let the sauce simmer gently while you finish the pasta.
- Combine pasta and sauce: Add the drained angel hair pasta to the skillet, stirring gently to coat the pasta evenly with the garlic butter sauce and shrimp mixture.
- Add cheese and serve: Sprinkle the grated parmesan cheese over the pasta and stir once more until combined and slightly melted. Garnish with fresh snipped parsley and an optional extra sprinkle of parmesan before serving.
Notes
- For the white wine, a dry variety like Pinot Grigio or Sauvignon Blanc works best.
- You can substitute shrimp with scallops or chicken if preferred.
- Serve this dish immediately for best flavor and texture.
- Adding crushed red pepper flakes provides a subtle heat; reduce quantity for a milder dish.
- If you prefer a non-alcoholic version, substitute white wine with chicken broth or vegetable broth.
