Ingredients

Sushi Rice

  • 1 1/2 Cups Sushi Rice (cooked)

Salmon and Toppings

  • 1 1/2 Pounds Salmon (cooked)
  • 1/2 Cup Low Sodium Soy Sauce or Coconut Aminos
  • 2 Tablespoons Toasted Sesame Oil
  • 3 Tablespoons Kewpie Mayo
  • 1 Tablespoon Sriracha (adjust more for spicier taste)
  • 1 Tablespoon Rice Vinegar
  • 1 (8 Ounce) Container Cream Cheese
  • 1 Bunch Green Onions (chopped)
  • 1/4 Cup Furikake Seasoning (plus extra for sprinkling)

Instructions

  1. Prepare Rice: Cook the sushi rice according to package instructions. Once cooked, set aside to cool slightly.
  2. Cook Salmon: Preheat your oven’s broiler. Line a baking sheet with parchment paper and place the salmon fillet in the center. Broil for 8 minutes until cooked through. Alternatively, bake at 375°F for 15-18 minutes until cooked. Remove and let cool.
  3. Shred Salmon: Once cooled, remove the salmon skin and use a fork to gently shred the salmon into bite-sized pieces.
  4. Prepare Salmon Mix: In a large bowl, combine the shredded salmon with soy sauce, toasted sesame oil, kewpie mayo, sriracha, rice vinegar, cream cheese, chopped green onions, and furikake seasoning. Stir well until all ingredients are fully incorporated and creamy.
  5. Preheat Oven: Set your oven to 400°F to prepare for baking the sushi bake.
