Ingredients
Meat and Seasonings
- 1 lb ground beef
- 1 chopped onion
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp dried cilantro
- 1/4 tsp cayenne pepper
- 1 tbsp minced garlic
Tortillas and Beans
- 16 small fajita-size flour tortillas
- 1 can refried beans
- Vegetable oil (for frying)
Toppings
- Taco sauce (amount as desired)
- 2 cups shredded Colby Jack cheese
- Diced tomatoes (for garnish)
- Chopped green onions (for garnish)
Instructions
- Brown the Beef: In a large skillet over medium-high heat, brown the ground beef together with the chopped onion. Cook until the beef is fully cooked through, then drain any excess grease from the pan.
- Season the Meat: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne pepper, and minced garlic to the cooked beef. Stir well to combine all seasonings evenly.
- Fry the Tortillas: In a separate skillet over medium heat, add enough vegetable oil to cover the bottom. Lightly fry each flour tortilla on both sides until golden brown, about 1-2 minutes per side. Drain tortillas on paper towels to remove excess oil.
- Assemble the Mexican Pizzas: Warm the refried beans until spreadable. Spread a layer of refried beans on each fried tortilla, then add a scoop of the seasoned beef. Sprinkle a little shredded Colby Jack cheese over the beef. Top with another fried tortilla, spoon some taco sauce over it, and add more shredded cheese.
- Bake the Pizzas: Preheat the oven to 400°F (205°C). Place the assembled Mexican pizzas on a baking sheet and bake for about 10 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and top with diced tomatoes and chopped green onions. Serve immediately and enjoy your flavorful Mexican pizzas!
Notes
- Drain excess grease after browning beef to keep pizzas from being greasy.
- Frying tortillas until golden brown ensures they become crispy and hold toppings well.
- Use canned refried beans warmed thoroughly for easy spreading.
- Add toppings of your choice such as sliced jalapeños or sour cream for extra flavor.
- Leftover pizzas can be refrigerated and reheated in the oven for best results.
