Bulgogi Sauce
- ¼ cup soy sauce
- 2 tablespoons rice wine vinegar

- 1 teaspoon fresh garlic, minced

- 1 pound ground beef
- ½ small yellow onion, diced
- 1 tablespoon scallion, diced
- 1 teaspoon sesame seeds
- 4 large soft boiled eggs
Instructions
- Prepare Bulgogi Sauce: In a medium bowl, combine the soy sauce, rice wine vinegar, 1 tablespoon brown sugar, sesame oil, minced ginger, and minced garlic. Stir well until all ingredients are blended. Set aside to allow flavors to meld.
- Cook Ground Beef and Onion: Heat a skillet over medium heat. Add the ground beef and diced onion, cooking until the beef begins to brown and onions soften, about 5 minutes. The meat should be mostly cooked but may still be slightly pink.
- Add Bulgogi Sauce and Simmer: Pour the prepared bulgogi sauce over the cooked ground beef and onions. Stir well to coat evenly, then reduce heat and let simmer for 6 to 10 minutes, allowing the flavors to deepen and the sauce to thicken slightly.
- Assemble the Bowls: Divide the cooked bulgogi beef mixture evenly into four serving bowls. Top each bowl with diced scallions and sesame seeds to add freshness and a nutty crunch.
- Add Soft Boiled Eggs and Serve: Place one soft boiled egg on top of each bowl of bulgogi. Serve immediately, optionally over steamed rice for a more filling meal.
