Vegetables

  • ⅔ cup chopped baby carrots
  • ½ cup frozen green peas
    • Eggs

      • 2 large eggs

      Seasonings and Oils

      • 2 tablespoons vegetable oil
      • 1 clove garlic, minced (optional)
      • 1 tablespoon soy sauce, or more to taste
      • 2 teaspoons sesame oil, or to taste

      Grains

      • 3 cups leftover cooked and chilled white rice


Instructions

  1. Prepare the Vegetables: Place the chopped baby carrots in a small saucepan and cover them with water. Bring the water to a low boil and cook the carrots for 3 to 5 minutes until tender. Stir in the frozen peas, then immediately drain the mixture in a colander to remove all the water.
  2. Heat the Wok and Cook Vegetables: Heat a wok over high heat until very hot. Add the vegetable oil, then quickly stir in the cooked carrots, peas, and minced garlic (if using). Stir-fry this mixture for about 30 seconds to release the flavors and combine the ingredients.
  3. Scramble the Eggs: Push the vegetables to the side of the wok and crack the eggs into the empty space. Stir quickly to scramble the eggs together with the vegetables, cooking until the eggs are just set.
  4. Add Rice and Seasonings: Add the chilled leftover white rice to the wok. Pour in the soy sauce and toss everything thoroughly to evenly coat the rice. Drizzle with the sesame oil and toss again to incorporate the nutty flavor.
