These Easy Coffee Truffles combine rich dark chocolate and the bold flavor of instant coffee, coated with smooth milk chocolate for a delicious homemade treat. Perfect for coffee and chocolate lovers, these truffles are chilled and rolled into bite-sized balls then dipped in melted milk chocolate, making them an elegant and indulgent dessert or gift.


Ingredients

Truffle Mixture

  • 90 ml (1/3 cup + 2 tsp) thickened/whipping cream
  • 200 g (7 oz) dark cooking chocolate (40% cocoa solids), finely chopped
  • 1 tbsp instant coffee granules

Coating

  • 125 g (4.5 oz) milk cooking chocolate


Instructions

  1. Prepare the dish: Line a small, flat dish (approximately 13 x 18 cm / 7 x 5 inches) with non-stick baking paper for the truffle mixture. Also line a baking tray with non-stick baking paper to place the rolled truffles on later.
  2. Heat the cream: Pour the cream into a small saucepan and gently heat over low heat until it is just below boiling point, taking care not to scorch or boil it.
  3. Mix chocolate and coffee: Turn off the heat and add the finely chopped dark chocolate and instant coffee granules to the hot cream. Stir continuously until the chocolate is completely melted and the mixture is smooth.
  4. Chill the mixture: Pour the chocolate mixture into the prepared dish and transfer it to the refrigerator to chill for about 2 hours, or until firm enough to roll into balls.
  5. Roll truffles: Using a small ice cream scoop or teaspoon, scoop about 3 level teaspoons of the chilled mixture and roll it quickly into compact small balls. If the mixture is too firm to roll, let it sit at room temperature for 5-10 minutes to soften slightly.
  6. Refrigerate the balls: Place each rolled ball on the lined baking tray and refrigerate for at least 30 minutes, or until firm.
  7. Keep hands cool: While rolling the balls, keep an ice pack or a pack of frozen peas nearby to cool your hands, drying them frequently with paper towels to prevent the mixture from sticking.
  8. Melt milk chocolate: Break the milk chocolate into evenly sized pieces and place them in a bowl over a pan of barely simmering water, ensuring no water touches the chocolate. Stir occasionally until almost melted, then remove from heat to allow residual heat to complete melting.
  9. Cool chocolate: Let the melted chocolate cool for about 15 minutes so it does not soften the truffles when dipping.
  10. Dip truffles: Remove the truffles from the fridge. One at a time, dip each ball into the melted milk chocolate, using two small forks to move them around and coat thoroughly.
  11. Remove excess chocolate: Lift each coated truffle out of the chocolate using forks and smooth it on the edge of the bowl to remove excess coating, then place back on the lined tray. If the chocolate gets too firm, gently reheat to continue dipping smoothly.
  12. Set coating: Place the tray of coated truffles in the refrigerator to set the chocolate coating for about 30 minutes until crisp. Optionally, reheat remaining chocolate and drizzle over the truffles as decoration.
  13. Store the truffles: Keep the truffles stored in an airtight container in the refrigerator for up to one week. If layering the truffles, separate layers with non-stick baking paper to prevent sticking.
