Ingredients

Chocolate Ganache

  • 180g heavy cream (3/4 cup)
  • 160g dark or semi-sweet chocolate

Mascarpone Cream

  • 2 1/2 cups heavy whipping cream, chilled (600g)
  • 1/2 cup granulated sugar (110g)
  • 1/2 tsp vanilla extract
  • 8 to 12 ounces good quality mascarpone cheese (like Galbani), slightly cooler than room temperature

Assembly

  • ~30-35 ladyfingers
  • 1 1/2 cups espresso or strong coffee, cooled
  • 1 tbsp cocoa powder, plus more for dusting


Instructions

  1. Make the Ganache: Bring 180g of heavy cream to a boil in a saucepan. Once boiling, pour it over 160g of chopped dark or semi-sweet chocolate placed in a heat-safe bowl. Cover and let sit for 5 minutes. Then stir gently until the chocolate melts completely and you get a smooth, shiny ganache.
  2. Prepare the Mascarpone Cream: In a large bowl, whisk the chilled 600g heavy whipping cream, 110g granulated sugar, and 1/2 teaspoon vanilla extract until thickened and holds soft peaks. Gradually add 8 to 12 ounces of mascarpone cheese in 2-3 additions, mixing on low speed until fully combined. Adjust the amount of mascarpone based on your preferred thickness and richness of the cream.
  3. Prepare the Coffee Mixture: Mix 1 tablespoon of cocoa powder into 1 1/2 cups of cooled espresso or strong coffee, stirring until well blended. Pour this mixture into a deep plate for easier dipping.
  4. Assemble the Tiramisu - First Layer: Quickly dip each ladyfinger (around 30-35) into the coffee-cocoa mixture for about 2 seconds per side, making sure they are evenly soaked but not soggy. Arrange the soaked ladyfingers tightly in the bottom of a 9x9 inch pan or dish.
