Instructions
- Heat the cream: Add the heavy cream and whole milk to a saucepan over medium heat. Whisk occasionally and heat until the mixture just starts to simmer with bubbles forming along the edges, then immediately remove from heat.
- Temper the eggs: In a medium bowl, whisk the egg yolks thoroughly. While continuously whisking, very slowly pour half of the hot cream mixture into the yolks to temper them, making sure not to pour too fast to avoid curdling.
- Cook the custard: Return the egg-cream mixture to the saucepan and stir continuously over medium-low heat for about 2 minutes, until the custard slightly thickens. Turn off the heat.
