Ingredients
Soup Base
- 1 chicken carcass and any bones and leftover meat
- Leftover chicken jus, gravy, or juices
- Boiling water (enough to just cover ingredients)
Vegetables & Legumes
- 2 tomatoes, chopped
- 2 celery sticks, chopped
- 2 cups frozen spinach, divided
- 1 (14-ounce) can chickpeas, drained
- 2 carrots, chopped
- 2 potatoes, chopped
Instructions
- Combine Ingredients: Place the chicken carcass, leftover meat, chicken jus or gravy, carrots, chopped tomatoes, celery, half the spinach, and drained chickpeas into a large stockpot.
- Add Water: Pour boiling water into the stockpot, ensuring it just covers all the ingredients for an ideal broth base.
- Bring to Boil: Set the pot on high heat and bring it to a rolling boil on the stove.
- Simmer Soup: Reduce heat to low and let the soup simmer gently for 2 hours, stirring occasionally. Add more water if the level drops too low to keep ingredients submerged.
- Add Potatoes: One hour before the soup is done, add the chopped potatoes to the pot to cook through and soften.
- Finish with Spinach: About 5 minutes before the end of cooking, add the remaining spinach to retain its vibrant color and nutrients.
- Remove Bones: Using tongs, carefully take out the chicken carcass and any large bones before serving to ensure a smooth eating experience.
- Serve: Ladle the soup into large bowls and serve with chunky bread to soak up the delicious broth.
Notes
- Adding water gradually during simmering helps maintain the desired consistency of the soup.
- You can substitute frozen spinach with fresh spinach if preferred, adjusting cooking time accordingly.
- Leftover chicken jus or gravy adds extra depth of flavor but can be omitted for a lighter broth.
- For a thicker soup, mash some chickpeas before adding or use less water.
- This soup is great for using up leftover chicken parts and reduces food waste.
