Description

A quick and easy Cabbage and Egg Stir Fry recipe that requires just 10 minutes from start to finish. Ingredients

Vegetables

  • 1/4 middle size cabbage, washed, drained completely and shredded
  • 2 garlic cloves, minced
  • 1 thumb ginger, minced
  • 2 fresh small Thai peppers, cut into circles

Eggs

  • 2 large eggs, whisked with a small pinch of salt and pepper

Oils & Sauces

  • 3 tbsp vegetable cooking oil, divided
  • 1 tbsp light soy sauce

Seasonings

  • 1/8 tsp salt
  • 1/8 tsp pepper


Instructions

  1. Prepare Cabbage: Wash the cabbage thoroughly, drain completely, and shred it into small pieces by hand.
  2. Whisk Eggs: In a bowl, whisk together the two large eggs along with a small pinch of salt and pepper until well combined.
  3. Cook Eggs: Heat 2 tablespoons of vegetable oil in a pan over medium heat. Pour in the whisked eggs. As the eggs start to firm up, gently break them into small scrambled pieces. Once cooked, transfer the eggs out of the pan and set aside.
  4. Cook Aromatics and Cabbage: Add the remaining 1 tablespoon of vegetable oil to the pan if needed. Fry the minced ginger and garlic for about 30 seconds until aromatic. Add the shredded cabbage and stir fry for around 1 minute until the cabbage softens slightly but retains some crunch.
  5. Combine and Season: Return the cooked eggs to the pan with the cabbage. Add the light soy sauce, additional salt and pepper to taste, and the sliced Thai peppers if using. Stir well to combine everything evenly.
  6. Final Stir Fry: Continue stir frying for another 1-2 minutes until all ingredients are heated through and flavors meld together.
  7. Serve: Remove from heat and serve the cabbage and egg stir fry immediately as a quick side dish or light meal.

  • Drain the cabbage very well after washing to ensure it fries properly and doesn't steam.
