Ingredients

Base

  • 1 small flatbread or naan

Buffalo Chicken Topping

  • 1/2 cup chopped cooked skinless chicken breast (or rotisserie chicken)
  • 3 Tbsp buffalo sauce

Vegetables and Cheese

  • 1 green onion (sliced thin)
  • 1 tbsp red onion (sliced thin)
  • 1/4 cup shredded mozzarella cheese
  • 1 Tbsp crumbled feta cheese

Optional Garnish

  • 1-2 Tbsp light sour cream


Instructions

  1. Prepare oven: Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Cook flatbread by itself: Lightly spray both sides of your flatbread with cooking spray. Place it on the prepared baking sheet and bake on the center rack for 5 minutes to crisp up the base slightly. Remove and set aside.
  3. Add toppings: In a small bowl, mix the chopped cooked chicken with the buffalo sauce until all chicken pieces are evenly coated. Spread this mixture evenly over the pre-baked flatbread using a spoon or your fingers. Sprinkle mozzarella cheese, crumbled feta cheese, thinly sliced red onion, and half of the sliced green onion over the top.
  4. Cook flatbread with toppings: Return the topped flatbread to the oven and bake for an additional 12 to 14 minutes or until the cheese is melted and bubbly, and the flatbread has turned golden and crispy.
