Salmon and Marinade

Instructions
- Preheat Oven and Prepare Marinade: Preheat your oven to 350°F (175°C). In a small bowl, whisk together 2 tablespoons of olive oil, dijon mustard, salt, pepper, minced garlic, lemon juice, dried dill, dried mint, and dried oregano until fully combined to create a flavorful marinade.
- Marinate the Salmon: Lay the salmon filets out on a sheet pan lined with parchment or foil. Pour the prepared marinade evenly over the salmon, ensuring each filet is well coated to infuse the flavors.
- Arrange Vegetables: Around the salmon filets on the sheet pan, arrange the halved baby potatoes, chopped asparagus, and cherry tomatoes evenly for roasting alongside the fish.
- Add Olive Oil to Vegetables: Drizzle the remaining 1 tablespoon of olive oil over the vegetables, tossing them lightly with your hands or a spoon to coat and enhance roasting.
- Bake: Place the sheet pan in the preheated oven and bake for approximately 17 minutes, or until the salmon reaches an internal temperature of 145°F (63°C) and the vegetables are tender.
