Ingredients
Pistachio Mousse

- 1 cup pistachios, chopped

Instructions
- Make the mousse: In a large bowl, beat the chilled heavy whipping cream with an electric mixer on high speed for five to six minutes until stiff peaks form. Gently fold in the tahini and pistachio cream until the mixture is uniform with no streaks remaining. Cover and refrigerate for at least 30 minutes to chill and set.
- Begin the layers: Spoon or pipe a small amount of the pistachio mousse into the bottoms of six wide-mouth Mason jars. Using a piping bag or a resealable plastic bag with the tip cut off will provide more control and a neat appearance.
- Add strawberries and chocolate: Top the pistachio mousse layer with a few pieces of chopped fresh strawberries, then drizzle a generous amount of chocolate sauce over the fruit.
- Add crunch with pistachios and kataifi: Sprinkle chopped pistachios and toasted frozen shredded phyllo dough (kataifi) over the chocolate sauce to add texture and crunch.
- Repeat layers: Continue layering mousse, strawberries, chocolate sauce, pistachios, and kataifi two to three more times, or until the jars are filled to the top.
- Serve: Serve the parfaits immediately to enjoy the contrast of creamy, fruity, chocolaty, and crunchy textures at their freshest.
