Description

These Crunchy Thai Chicken Salad Wraps combine tender cooked chicken, a crunchy peanut and coleslaw mixture, fresh cilantro, and a spicy peanut sauce for a flavorful and refreshing wrap perfect for lunch, meal prep, or a light dinner.

Instructions

  1. Combine Salad Ingredients: In a mixing bowl, add the cubed chicken breast, chopped peanuts, coleslaw mix, julienned carrots, and chopped cilantro. Toss these together gently to combine all the flavors evenly.
  2. Add Peanut Sauce: Pour in about 1/4 to 1/3 cup of the spicy peanut sauce to the bowl and stir the mixture thoroughly until everything is coated well with the sauce.
  3. Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon approximately 1/4 to 1/3 cup of the chicken and slaw mixture onto the bottom third of the tortilla.
  4. Roll the Wrap: Fold the bottom edge of the tortilla up and over the filling. Then, fold in the sides of the tortilla and roll tightly to encase the filling securely, forming a neat wrap.
  5. Prepare Remaining Wraps: Place the finished wrap seam-side down on a plate to prevent it from unrolling. Repeat this process with the remaining tortillas and filling.
  6. Serve or Store: Serve immediately with extra spicy peanut sauce on the side for dipping, or wrap each tightly in plastic wrap for meal prep to enjoy later.
