Description

A flavorful and easy-to-make Crockpot Shrimp Boil featuring succulent shrimp, tender red potatoes, sweet corn, and smoky beef sausage, all simmered in a savory broth seasoned with seafood spices. Perfect for a family meal with minimal hands-on time.

Ingredients

Seafood and Meat

  • 2 pounds large shrimp, deveined with shell on (raw)
  • 2 pounds smoked beef sausage, cut into 1-inch segments

Vegetables

  • 1 ½ pounds red potatoes, cut in half
  • 4 ears sweet corn, cut into 3-inch segments

Seasonings and Liquids

  • ½ cup seafood seasoning, divided
  • 4 cups chicken broth
  • 2 tablespoons garlic, minced
  • 1 tablespoon onion powder
  • Juice from 1 lemon

Instructions

  1. Prepare the base: Place the cut corn and halved red potatoes evenly at the bottom of a 6-8 quart slow cooker to form the bottom layer for even cooking.
  2. Season the vegetables: Sprinkle half of the seafood seasoning evenly over the corn and potatoes to infuse them with flavor.
  3. Add sausage and liquids: Add the smoked beef sausage segments into the slow cooker. Pour in the chicken broth, then sprinkle the onion powder and minced garlic evenly over the ingredients to create a well-seasoned cooking liquid.
  4. Cook vegetables and sausage: Set the slow cooker to HIGH and cook for 3 ½ hours, allowing the potatoes and corn to become tender and the sausage to impart its smoky flavor.
  5. Add shrimp and finish cooking: After 3 ½ hours, add the raw deveined shrimp to the crockpot. Squeeze the fresh lemon juice over the shrimp and sprinkle with the remaining seafood seasoning. Change the slow cooker setting to LOW and cook for an additional 30 minutes until shrimp are pink and cooked through.
  6. Serve: Spoon the shrimp boil mixture onto plates and serve warm immediately for the best flavor and texture.

Notes

  • Use raw shrimp with shell on to maximize flavor; deveining is optional but recommended for texture.
  • For a spicier variation, add cayenne pepper or hot sauce to the seafood seasoning.
  • Adjust cooking times slightly depending on the size and power of your slow cooker.
  • Fresh lemon juice adds brightness; avoid bottled lemon juice for best results.
  • This dish pairs well with crusty bread or coleslaw for a complete meal.
