Ingredients

Chicken Mixture

Quesadillas

  • 6 burrito-size flour tortillas
  • 2 cups shredded Monterey Jack cheese


Instructions

  1. Slow Cook the Chicken: Place the chicken breasts, diced tomatoes with green chilis, taco seasoning, and chopped onion into the crockpot. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is tender.
  2. Shred the Chicken: Remove the chicken from the crockpot and shred it using two forks. Stir the shredded chicken back into the remaining flavorful juices in the crockpot.
