Ingredients
Garlic-Chive Dipping Sauce
- 1 garlic clove, finely grated
- 1 cup sour cream
- 3 tbsp thinly sliced chives
- 1 tsp kosher salt
Crispy Carrot Chips
- 8 oz large carrots
- 1 tbsp neutral oil (such as vegetable or canola oil)
- 1/4 tsp kosher salt
- 2 oz Parmesan, shredded (about 1 cup)
- Freshly ground black pepper, to taste
Instructions
- Prepare the garlic-chive dipping sauce: In a small bowl, combine the finely grated garlic, sour cream, thinly sliced chives, and 1 teaspoon kosher salt. Mix well and refrigerate until ready to serve to allow flavors to meld.
- Preheat the oven: Arrange an oven rack in the center and preheat the oven to 400°F (200°C).
- Prep the carrots: Peel the carrots and cut them crosswise into 1/4-inch-thick coins, discarding any tiny ends or reserving them for another use. For optimal chip size, select rounds between 3/4 to 1 inch in diameter. You should have about 6 ounces of carrot coins.
- Season the carrots: Place the carrot coins in a small bowl. Add the neutral oil and 1/4 teaspoon kosher salt, then toss thoroughly to coat each piece evenly.
- Arrange carrots on cheese: Spread the shredded Parmesan cheese in a 13 x 9-inch rectangle on a parchment-lined baking sheet. Arrange the carrot coins on top of the cheese, spacing them approximately 1/2 inch apart. This spacing allows the cheese to melt into a frilly frico skirt around each piece. Season the carrots with freshly ground black pepper to taste.
- Roast the carrot chips: Bake in the preheated oven for 8 to 12 minutes, or until the carrots are crisp-tender and the cheese has melted and bonded into one large frico sheet beneath the carrots. The cheese will be slightly darker around the carrot bottoms; some white patches of melted cheese between carrots should remain. Check early to avoid burning.
- Rest and break into pieces: Remove the baking sheet and allow the carrot chips to rest for 5 minutes. Then carefully break the large cheese frico sheet into individual pieces so that each carrot coin retains its frilly cheese skirt.
- Serve: Transfer the crispy carrot chips to a serving platter and serve alongside the prepared garlic-chive dipping sauce.
