- Cook Mushrooms: Push the cooked onions to the edge of the skillet, creating space in the center. Add the sliced mushrooms and reduce heat to medium. Cook, stirring occasionally, until mushrooms are tender and have released their moisture, about 10 minutes.
- Prepare Chicken Livers: While the vegetables cook, rinse the chicken livers under cold running water. Pat dry thoroughly with paper towels, trim away any connective tissue or stringy parts, and cut into thin strips.
- Cook Chicken Livers: Push the onion and mushroom mixture to the edges of the skillet. Add the remaining 2 tablespoons of butter and let it melt. Add the chicken liver strips to the center and season with sea salt. Cook over medium heat, stirring occasionally, until the livers are browned and cooked through, around 5 minutes.
- Add Wine and Thyme: Sprinkle fresh thyme leaves and pour in the dry white wine. Stir gently to combine all ingredients. Cook over medium heat for another 3 minutes to evaporate alcohol and allow flavors to meld. The mixture may appear watery at this stage.
- Incorporate Sour Cream: Lower heat to low and stir in the sour cream carefully to prevent curdling. Continue cooking gently for about 5 minutes, stirring occasionally, until the sauce is smooth, creamy, and heated through without boiling.
