These Copycat Healthy Thin Mints are a delicious, guilt-free twist on the classic Girl Scout favorite. Made with almond flour, cocoa, and natural sweeteners, they feature a minty chocolate coating and are perfect for those craving a low-sugar, gluten-free treat that's full of flavor.


Ingredients

Dry Ingredients

  • 1 3/4 cups almond flour
  • 1/3 cup cocoa powder
  • 1/2 tsp salt

Wet Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp peppermint extract

Chocolate Coating

  • 1.5 cups dark chocolate chips
  • 1 tbsp melted coconut oil
  • 1/2 tsp peppermint extract


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine the almond flour, cocoa powder, and salt. Stir to evenly distribute all the dry ingredients.
  3. Add Wet Ingredients: Add the coconut oil, maple syrup, and peppermint extract to the dry mix. Stir until the dough is well combined and forms a cohesive texture.
  4. Chill Dough: Place the dough in the refrigerator for 30 minutes to firm up, which makes it easier to roll out.
  5. Roll Out Dough: Between two sheets of parchment or wax paper, roll the chilled dough until it is about 1/4 inch thick to ensure even baking.
  6. Cut Cookies: Use a mason jar lid, shot glass, or linzer cookie cutter to cut out circles. Place these cut dough circles onto the parchment-lined baking sheet.
  7. Repeat Cutting: Continue cutting cookies until all the dough is used up, making sure to re-roll scraps as necessary.
