Description

This Classic Potato Salad combines tender Yukon Gold potatoes with a creamy, tangy dressing made from mayonnaise, buttermilk, mustard, and hard-boiled eggs. Ingredients

Potatoes

  • 3 pounds Yukon Gold Potatoes

Eggs

  • 4 hard boiled eggs

Dressing

  • 1 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 Tablespoons yellow mustard (or half yellow mustard, half Dijon mustard)
  • Salt and pepper to taste
  • 1 splash pickle juice

Vegetables and Add-ins

  • 2 dill pickles, finely chopped
  • 2 ribs celery, chopped
  • 1/4 cup red onion, chopped


Instructions

  1. Boil and Chop Potatoes: Place whole, unpeeled Yukon Gold potatoes in a large pot of water. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes until the potatoes are fork tender. Drain completely and cover the pot to allow the potatoes to steam for 5-10 minutes. Peel if desired, then cut into 1/2 inch chunks.
  2. Make Dressing: Separate egg yolks from the whites of the hard boiled eggs into a bowl. Mash the yolks using a fork, then stir in mayonnaise, buttermilk, yellow mustard, a splash of pickle juice, and season with salt and pepper to taste until smooth.
  3. Assemble: Pour the dressing over the warm potato chunks. Chop the egg whites and add them along with celery, red onion, and finely chopped dill pickles. Stir gently to combine everything evenly.
  4. Chill and Serve: Cover the potato salad and refrigerate for a few hours to allow the flavors to blend well before serving chilled.
