- 1 cup heavy cream (full-fat)
- ½ cup dark chocolate (chips or chopped bar), melted
- 2 tablespoons sugar

Instructions
- Melt the chocolate: Break the chocolate into small pieces and melt it in a microwave-safe bowl in 20-second bursts, stirring between each interval until smooth. Set aside to cool slightly.
- Whip the cream: In a separate bowl, beat the heavy cream, sugar, and vanilla extract together until soft peaks form — this means the cream holds its shape but remains smooth and fluffy.
- Fold it together: Add a spoonful of whipped cream into the melted chocolate to lighten it. Then gently fold in the remaining whipped cream using a spatula until the mixture is fully combined and airy, taking care not to deflate the mousse.
- Chill: Spoon the mousse into serving dishes or cups and chill in the refrigerator for at least 30 minutes, though letting it set for up to an hour will improve texture and flavor.
