Description

Indulge in these decadent Chocolate Mousse Brownies featuring a rich, fudgy brownie base topped with a silky chocolate mousse layer and a glossy ganache finish. Perfectly balanced with intense cocoa flavor and creamy textures, this dessert is an impressive treat for any occasion.

Ingredients

For the Brownie Base:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Chocolate Mousse:

  • 1 1/2 cups (350ml) heavy whipping cream, chilled
  • 8 oz (225g) semisweet chocolate, finely chopped
  • 3 tbsp (45ml) milk
  • 2 tbsp (25g) powdered sugar

For the Ganache Topping:

  • 4 oz (115g) semisweet chocolate, finely chopped
  • 1/2 cup (120ml) heavy cream

Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) square baking pan with parchment paper, leaving a slight overhang on the sides. This ensures easy removal of the brownies later.
  2. Make the Brownie Batter: In a large bowl, whisk together the melted butter, granulated sugar, eggs, and vanilla extract until smooth and thoroughly combined to create a rich batter.
  3. Add Dry Ingredients: Sift the unsweetened cocoa powder, all-purpose flour, salt, and baking powder together. Gently fold these dry ingredients into the wet batter just until no streaks remain, taking care not to overmix to keep the brownies tender.
  4. Bake the Brownie Layer: Pour the batter into the prepared pan and smooth the surface with a spatula. Bake in the preheated oven for 20 to 25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Allow the brownie base to cool completely inside the pan before adding the mousse.
  5. Make the Mousse Base: Heat the milk in a small saucepan over low heat until it just begins to steam. Pour the warm milk over the finely chopped semisweet chocolate placed in a heatproof bowl. Let it sit undisturbed for 2 minutes, then gently stir until the chocolate melts fully and the mixture becomes smooth. Allow this to cool to room temperature.
  6. Whip the Cream: In a separate bowl, beat the chilled heavy whipping cream and powdered sugar using an electric mixer until soft peaks form, creating a light and fluffy texture.
  7. Fold to Combine: Stir a small spoonful of the whipped cream into the cooled chocolate mixture to loosen it. Then, carefully fold in the remaining whipped cream gently until fully blended and airy to retain the mousse’s lightness.
  8. Assemble Mousse Layer: Spread the chocolate mousse evenly over the cooled brownie base with a spatula. Place the pan in the refrigerator and chill for at least 2 hours so the mousse sets firmly.
  9. Make the Ganache: Put the chopped semisweet chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 2 to 3 minutes. Stir gently until the ganache is smooth and glossy.
  10. Add Ganache Topping: Pour the ganache over the chilled mousse layer and smooth the surface with an offset spatula. Refrigerate the pan for 1 hour or until the ganache firms up.
  11. Slice and Serve: Once fully set, lift the dessert out of the pan using the parchment paper overhang. Using a clean, sharp knife, slice into squares, wiping the knife between cuts for clean, neat edges. Serve chilled and enjoy!

Notes

  • Ensure the brownie base is fully cooled before adding the mousse to prevent melting.
  • Use high-quality semisweet chocolate for best flavor in mousse and ganache.
  • The mousse should be folded gently to avoid deflating the airiness.
  • Chill times are essential for proper setting and texture; do not rush refrigeration steps.
  • For cleaner slicing, warm the knife slightly under hot water and dry it before cutting.
