Ingredients

Fruit Base

  • 1 cup fresh strawberries
  • 1 cup frozen strawberries
  • ½ lemon, juiced
  • ½ cup granulated sugar

Chocolate Coating

  • 1½ cups chocolate chips (milk or semisweet)
  • 1 tablespoon coconut oil


Instructions

  1. Prepare the fruit blend: Combine fresh and frozen strawberries, lemon juice, and granulated sugar in a blender. Blend until the mixture is smooth and well combined to ensure an even fruity base for the popsicles.
  2. Freeze the popsicle mixture: Pour the blended mixture into popsicle molds. Place the molds in the freezer and allow them to freeze overnight or for at least 6 hours until completely solid.
  3. Melt the chocolate coating: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in the microwave at 30-second intervals, stirring between each, until the chocolate is fully melted and smooth without burning.
  4. Dip the popsicles in chocolate: Remove the frozen popsicles from the molds by running slightly warm water over the outside of the molds to loosen them without melting the popsicles. Immediately dip each popsicle into the melted chocolate, allowing any excess to drip off before placing them on a baking sheet lined with parchment paper.
  5. Set the chocolate coating: Return the chocolate-dipped popsicles to the freezer. Freeze again until the chocolate is completely set and firm, about 30 minutes to 1 hour, before serving.
