Ingredients
Cherries
- 2 jars (10 oz each) Maraschino Cherries with Stems
Fondant
- 3 tablespoons butter, softened
- 3 tablespoons light corn syrup
- 2 cups powdered sugar, sifted
Chocolate Coating
- 10 oz Melting Wafers (Dark Chocolate, Milk Chocolate, or White Ghirardelli brand recommended)
Instructions
- Prepare Cherries: Drain the maraschino cherries and lay them on a paper towel-lined baking sheet. Use additional paper towels to gently pat the cherries dry, ensuring they have minimal moisture before proceeding.
- Make Fondant: In a bowl, combine the softened butter, light corn syrup, and sifted powdered sugar. Mix thoroughly until a smooth, pliable fondant forms. Measure one teaspoon of the fondant and shape it into a flat disc. Wrap each cherry with a fondant disc, covering it completely. Place the wrapped cherries in the refrigerator to chill until the fondant is firm.
- Melt Chocolate: Following the instructions on the melting wafers packaging, melt your choice of chocolate wafers until smooth and fluid.
- Dip Cherries: Using a fork or dipping tool, dip each fondant-wrapped cherry into the melted chocolate. Allow excess chocolate to drip back into the bowl. Place the dipped cherries on a wax paper-lined baking sheet to set and harden.
Notes
- Ensure cherries are completely dry before wrapping to prevent fondant from becoming too sticky.
- Use high-quality melting wafers like Ghirardelli for best texture and flavor.
- Store finished cherries in a cool place or refrigerate for longer shelf life.
- Handle dipped cherries gently until chocolate sets to avoid fingerprints or smudges.
