Description
A warm, gooey Pizzookie combines the delightful flavors of a cookie and a pizza in one skillet dessert, topped with creamy vanilla ice cream for the perfect comforting treat.
Ingredients
Cookie Batter
- 1/2 cup butter
- 1 cup dark brown sugar
- 2 teaspoons vanilla extract
- 1 egg
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon baking soda
- 1/2 cup semi-sweet chocolate chips
For Serving
- Vanilla Ice Cream
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the pizzookie.
- Melt Butter: In a microwave-safe bowl, melt the butter until fully liquid and then transfer it to a mixing bowl for combining with other ingredients.
- Mix Wet Ingredients: Add the dark brown sugar to the melted butter and whisk together. Then add the vanilla extract and egg, whisking until the mixture is smooth and fully incorporated.
- Add Dry Ingredients: Combine the all-purpose flour, baking powder, kosher salt, and baking soda, then gradually mix them into the wet ingredients until fully blended. Stir in the semi-sweet chocolate chips evenly throughout the batter.
- Prepare Skillet and Bake: Lightly spray a medium-sized skillet with baking spray to prevent sticking. Spread the cookie batter evenly in the skillet. Bake in the preheated oven for 22-24 minutes until the edges are golden and the center is just slightly gooey.
- Rest and Serve: Remove the skillet from the oven and let the pizzookie rest for a few minutes. Top with scoops of vanilla ice cream and serve warm for the best experience.
Notes
- Be careful not to overbake to maintain the gooey center.
- You can substitute semi-sweet chocolate chips with milk or dark chocolate according to preference.
- For a dairy-free version, use vegan butter and dairy-free ice cream.
- This recipe can be doubled by using a larger skillet or baking in two skillets.
