Instructions

  1. Make Chipotle Mayonnaise (optional): If using homemade chipotle mayonnaise, prepare it first using your preferred recipe. This typically takes around 5 minutes.
  2. Preheat Oven: Preheat the oven to 350°F (175°C) to toast the sandwiches and melt the cheese.
  3. Toast Bottom Bread Halves with Chicken and Cheese: Split the ciabatta rolls and place the bottom halves open-faced on a cookie sheet. Evenly distribute the shredded chicken on each bottom half and cover with a slice of smoked gouda cheese. Bake in the oven for 10 minutes until the cheese is melted and the chicken warms through.
  4. Prepare the Top Bread Halves: Spread a generous layer of chipotle mayonnaise on the inside of the top halves of the ciabatta rolls. Then layer sliced avocado, diced peppadew peppers, and minced fresh cilantro over the mayo.
