Description

A quick and flavorful Chickpea Fried Egg recipe combining spicy chickpeas and a perfectly cooked egg, topped with feta cheese and fresh cilantro. This dish offers a nutritious and satisfying meal in just 10 minutes, perfect for breakfast or a light lunch.

Ingredients

Chickpea Mixture

  • ⅓ cup cooked chickpeas
  • 1 tsp chili paste
  • 1 tbsp olive oil
  • ¼ tsp paprika
  • Salt and pepper, to taste

Egg and Garnish

  • 1 egg
  • 1 tbsp crumbled feta cheese
  • Fresh chopped cilantro, for serving

Instructions

  1. Heat the pan: Place a pan over medium heat and add 1 tablespoon of olive oil, allowing it to warm up before adding other ingredients.
  2. Cook chickpeas: Add the cooked chickpeas along with chili paste to the pan. Cook for 2-3 minutes, stirring occasionally, so the chickpeas absorb the chili flavor.
  3. Add paprika and shape: Sprinkle paprika over the chickpea mixture and stir. Then shape the mixture into a circle in the pan, leaving a small empty pocket in the center for the egg.
  4. Crack the egg: Carefully crack the egg into the center pocket of the chickpea circle, making sure the yolk stays intact.
  5. Season and cook egg: Season the egg with salt and black pepper to taste. Cook for 3-5 minutes or until the egg white is fully set and the yolk is cooked to your preference.
  6. Garnish and serve: Once cooked, top the dish with crumbled feta cheese and freshly chopped cilantro. Serve immediately and enjoy your flavorful chickpea fried egg.

Notes

  • Use canned chickpeas for convenience, just rinse and drain before cooking.
  • Adjust chili paste quantity to control heat level.
  • For a runnier yolk, reduce cooking time slightly.
  • Crumbled feta adds a tangy contrast but can be omitted for a dairy-free version.
  • Serve with toast or a side salad for a complete meal.
