- 1/2 cup (~105g) onion paste (from 1 roughly chopped medium onion blended with minimal water)
- 1/2 cup crushed tomatoes (from 2-3 small tomatoes)
- 1 teaspoon salt (adjust to taste)
- 1.5 teaspoon garlic paste
- 1/2 teaspoon ginger paste

- 1 medium onion, cut into chunks or petals
- 2-3 Indian green chilies (hot, adjust to taste)
- 1.5 tablespoon ghee (optional)

Whole Spices
- 1 teaspoon cumin seeds
- 5 green cardamom pods
- 2 cloves
- 1 bay leaf
- 1-2 dried red chilies (optional)
- 5-7 black peppercorns
Finishing Spices
- 1 teaspoon garam masala
- 1 teaspoon kasoori methi (dried fenugreek leaves, optional)
Instructions
- Preparation: In a large bowl, marinate the chicken pieces with red chili powder, lemon juice, salt, and black pepper powder. Let it sit while you prepare the masala.
- Make Onion and Tomato Paste: Blend the roughly chopped onion with minimal water to create a thick onion paste and transfer it to a bowl. Next, crush the fresh tomatoes in the grinder to create a coarse tomato puree.
- Cut Onions: Cut a medium onion into large chunks or separate the petals for later addition to the dish.
- Prepare Yogurt Spice Mix: In a small bowl, combine all powdered spices except garam masala with the yogurt to create a flavorful yogurt mixture.
- Heat Oil and Toast Whole Spices: Warm mustard oil in a wide, heavy-bottomed pot until slightly smoky (if using mustard oil). Crackle the cumin seeds, green cardamom pods, cloves, bay leaf, dried red chilies, and black peppercorns in the hot oil to release their flavors.
- Cook Onion Paste: Add the onion paste to the pot and cook on low-medium heat for 8-10 minutes until it turns golden brown, stirring occasionally to prevent sticking.
- Sauté Ginger and Garlic: Add the ginger and garlic paste to the pot, sautéing for a few seconds until aromatic.
- Add and Cook Tomatoes: Add the crushed tomatoes and cook for 3-5 minutes until the mixture thickens and appears slightly shiny.
- Incorporate Yogurt Spice Mix: Reduce heat to low and stir in the yogurt mixture. Cook for another 3-4 minutes, stirring continuously, until the masala thickens and begins to separate oil.
- Cook Chicken: Add the marinated chicken to the pot and increase heat to medium. Stir to coat the chicken with the masala, then cook uncovered for 6-8 minutes, allowing the chicken to start releasing its juices. Avoid excessive stirring.
- Simmer Chicken: Once the chicken releases water, cover the pot and cook for 5-6 minutes. If needed, add 1/3 to 1/2 cup water to ensure the chicken cooks through. Total cooking time for boneless chicken is about 8-9 minutes; increase if using bone-in chicken.
