Instructions
- Prepare the chicken: Slice the chicken breasts in half widthwise, cutting all the way through, effectively butterflying and splitting into 4 pieces. Pound each piece to about 1/4 inch thickness using a meat pounder or rolling pin to ensure even cooking.
- Set up breading station: Arrange three wide bowls. In the first, combine flour, salt, and pepper. In the second, whisk the eggs. In the third, mix panko breadcrumbs with grated parmesan cheese.
- Bread the chicken: Coat each chicken piece evenly with the flour mixture on all sides. Dip into the egg wash next, ensuring full coverage. Finally, coat thoroughly with the panko and parmesan mixture, pressing to adhere well on both sides. Repeat for all chicken pieces.
- Cook the chicken: Heat a large saucepan over medium-high heat and add the neutral oil. When the oil is hot, fry the chicken breasts two at a time for 4-5 minutes per side until golden brown and cooked through. Transfer cooked chicken to a paper towel-lined plate to drain excess oil. Repeat until all chicken is cooked.
- Prepare the salad: In a large bowl, combine chopped romaine lettuce, croutons, shredded parmesan, and Caesar dressing. Toss until well mixed.
- Combine chicken and salad: Slice the fried chicken cutlets into bite-sized pieces and add them to the salad mixture. Toss gently to combine all ingredients evenly.
- Assemble the wraps: Lay out an extra-large burrito wrap, spoon a portion of the chicken Caesar salad mixture onto each wrap, then wrap tightly. Cut wraps in half diagonally and serve immediately for best texture and flavor.
