  • 2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter, melted


Instructions

  1. Sauté Vegetables: In a large heavy-bottomed pot like a Dutch oven, melt the butter over medium-high heat. Add the diced onion, matchstick carrots, and diced celery. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften. Add the minced garlic and cook for another 1 minute until fragrant.
  2. Make Roux and Add Liquids: Sprinkle the flour over the vegetables and stir constantly for 1 minute to cook the flour.
